5 Healthy Tips for Oil re-use
One of the routinely asked question to me is- “How many time can I re-use the oil?”
Well, it is really difficult question as
all oils are different.
They differ in their properties.
Let us take an example of just one of the many properties of oils- ‘smoking point’.
Different oils have different smoking points.
The one with high smoke point are much stable.
They do not break down
when heated at high temperature.
They can be used for deep frying.
Example of oils having high smoking point are—
- groundnut oil
- rice bran oil
- mustard oil
- coconut oil
Some oils have low smoke point.
They are not stable and they
easily get break down when
heated at high temperature.
Such oils are just used for sautéing or dressing salads.
Example of oil with low smoking point is,
- Olive oil
However, to answer the question about oil re-use in general,
you need to take some precautions if
you are going to re-use your oil.
5 healthy tips to re-use your oil are:
1-Same Day:
Once heated you should consume the oil on the same day.
You can use this oil in dough making,
vegetable sautéing or
simply roasting your parathas.
2-Air tight container:
If you want to store your used oil, make sure
to cool it down completely.
And then, store that oil in an air tight container.
Container should preferably be made up of glass or steel.
3-Remove particles:
Your used oil may contain fried food particles.
Bacteria easily grow on these food particles and
will spoil your oil much sooner than expected.
Therefore, before storing your oil,
remember to filter it through a strainer.
4-Color change and sticky:
Check your oil each time before re-using it.
If its color is darker, or if it is greasy/sticky
than usual, discard the oil immediately.
5-Smoke:
If your oil become smoky on heating much earlier than expected,
it has accumulated HNE (hydroxy-2 trance nonenal).
HNE is a toxic substance, and
it can lead to severe diseases like
- Parkinson’s disease
- Alzheimer’s disease,
- Stroke and
- Liver disease.
Discard this oil immediately.
And, of course,
The best practice is not to re-use your oil once you have heated it.
